Recipe: Beanless Turkey Chili
Ingredients:
- 1 tbsp avocado oil or cooking spray, as needed
- ½ cup celery, diced
- ½ cup carrots, diced
- 1 cup mushrooms, diced
- 1 pound ground organic 93% lean turkey
- 1 tbsp chili powder
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/4 tsp cayenne pepper
- 1/4 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp salt
- 1/4 tsp freshly ground pepper
- 1 cup bell peppers, chopped
- 1 cup zucchini, chopped
- 1 can (28oz) fire-roasted tomatoes
- 3 tbsp canned green chilis, chopped
- ¼-½ cup organic chicken broth, as needed
Instructions:
- In a large pot, heat the avocado oil or cooking spray over medium heat.
- Add the diced celery and carrots to the pot and sauté for 3-4 minutes, or until they become tender and fragrant.
- Incorporate the diced mushrooms into the pot and continue sautéing for another 3-4 minutes, allowing them to release their natural flavors.
- Add the ground organic turkey to the pot and brown it on all sides, for approximately 4 minutes.
- Sprinkle the organic chili seasoning, cumin, cayenne pepper, onion powder, garlic powder, salt, and pepper over the ingredients in the pot, followed by the chopped bell peppers, zucchini, canned tomatoes, green chilis, and ¼ cup of organic chicken broth.
- Stir all the ingredients together, ensuring that the seasoning is evenly distributed. If desired, add more chicken broth to achieve your preferred consistency.
- Increase the heat to bring the mixture to a high simmer, then reduce it to a low simmer.
- Cover the pot and let the chili cook for 20 minutes, allowing the flavors to meld together and the vegetables to soften.
